These easy,five-ingredient Peanut Butter S’mores Bars have a layer of marshmallow and milk chocolate sandwiched between two layers of peanut butter cookies.

Isn’t it fun that people love s’mores so much, there is a National S’mores Day, just to celebrate the awesomeness of s’mores?

Thankfully, s’mores are good any day of the year, especially days where no campfire is required. Because let’s face it – everyone wants s’mores more often than they can have a campfire.

Peanut Butter S’mores

Recently, I discovered that peanut butter is a delicious addition to s’mores. Just spread it on the graham cracker before adding the chocolate and marshmallow.

For these bars, I ditched the traditional graham crackers (which I think can get kind of dry sometimes), and sandwiched the marshmallow and chocolate between two gooey layers of peanut butter cookies.

Peanut Butter Smores Bars

This is a combination any peanut butter and chocolate fan will love.

They are simple to make and only require five ingredients: peanut butter, eggs, sugar, chocolate, and marshmallows.

Combine the peanut butter, eggs, and sugar in a mixing bowl. Beat to combine and then spread half the peanut butter mixture in a baking pan.

Next, spread the marshmallow creme over the peanut butter mixture.

Break the candy bars into squares and layer the chocolate over the marshmallow creme.

Top the chocolate with the remaining peanut butter mixture and bake for about 20 minutes.

The result is a fun treat that is good any day of the year. Not just on National S’mores Day!

These easy five-ingredient peanut butter s'mores bars have a layer of marshmallow and milk chocolate sandwiched between two layers of peanut butter cookie.

Ingredients

  • 2 cups creamy peanut butter not natural
  • 2 eggs
  • 2 cups granulated sugar
  • 8 ounces marshmallow creme
  • 4 1.5 ounce milk chocolate bars like Hersheys

Instructions

  • Beat together the peanut butter, eggs, and sugar in a medium mixing bowl. Divide the dough in half and spread one half into a greased 11 x 7 inch baking pan.

  • Spread the marshmallow creme on top of the peanut butter dough and top with the chocolate bars.

  • Spread the remaining half of the peanut butter dough on top and bake at 350 for 22-24 minutes or until set and the edges are lightly browned.

  • Remove from the oven and let cool for 30 minutes. Place in the refrigerator for a few hours until chilled. (this is to set the chocolate again, otherwise it will be gooey). Cut into bars and serve.

Notes

To make this recipe in a 9 x 13-inch baking pan, you will need to make the recipe 1 and ½ times.

    These were easy to make and turned out just like the picture. I did use dark chocolate chips, in place of the Hershey bars (I don’t like Hershey chocolate!), But that was purely preference. The only thing that kept it from 5 stars was the peanut butter dough…Sadly, even after being cooked, all I could taste and feel in my mouth was the granulated sugar. Has anyone tried this with powder sugar perhaps? And maybe a little less sugar? I think that because the texture calls specifically for “not natural” peanut butter, that also adds to the sugar content, too. My kids, of course, had no problem eating this recipe as-is!

    I make these cookies bc they are gluten free. I let the dough sit in the fridge overnight to kind of incorporate the sugar. 🙂

    These were extremely and overly sugary. Even my kids would not eat any more of them. I used organic marshmallow cream and enjoy life chocolate chips so I wasted around $19 in ingredients total on these. They also fell apart and did not stay as bars.

      I’m sorry to hear that they weren’t a hit for your family. These bars are certainly a sweet treat, with 3 out of 5 ingredients that are clearly going to be very sweet. I’ve never used organic marshmallow cream or tried this recipe with vegan chocolate chips.

      When made with traditional marshmallow cream and Hershey bars, these bars have never fallen apart on us. (I don’t know that the ingredients made a difference there, but I also wasn’t in your kitchen with you to see if anything else was different.)
